Made with our whole durum wheat grown without fertilizers and treatments, stone ground in a high hill mill, our pasta imitates the shape of the ear of wheat, which in turn reflects the golden spiral of life on which the growth of plants is based. The experience of the seed awakened by water, which in the field is transformed day after day into an ear dried by the sun, lives again in the expert processing of the Pastificio Artigiano Fabbri: the exclusive slow drying of 96 hours, at temperatures below 38 °C, reproduces the natural heat of the sun to preserve all the properties of the wheat and increase its digestibility. Cooking this pasta means evoking with water and fire all these steps to bring the taste of life inside you.
